I am one of 4 sisters and my third sister Steph, is generally my first phone call of the day (and then about 10 times after that). Often, we speak all the way home from the early school lift, yet, we never run out of things to say. There is something truly unique about sisterhood, and it’s one of my life’s treasures. Steph loves finding healthy, wholesome recipes that are great for her whole family. She shared this absolute gem with me, and my family was also totally mad about it as I am sure yours will be too. A most delicious Pesach meal that can be used all year round using fresh ingredients for seasoning and flavour.

Ingredients

8 butterflied chicken breast schnitzels
3 lemons
A handful of basil
A handful of Italian flat leaf parsley
2 cloves of garlic
½ a cup olive oil
Good grind of salt and pepper
  1. Grate the zest of the lemons and squeeze the juice out.
  2. In a blender, blend together the herbs and garlic, half of the squeezed lemon juice, all the lemon zest, olive oil, salt and pepper.
  3. Pour the marinade over the chicken and leave to marinate for approximately one hour.
  4. Heat a griddle pan on the stove till very hot and grill the schnitzels until chargrilled and cooked through.
  5. Drizzle with the remaining lemon juice. Serve with a crunchy green salad and/or vegetables of your choice.
