A very versatile salad that can be served with a fish or meat meal. So perfect for lazy Sunday afternoon braais or to accompany fish or chicken. Even on its own it’s a delicious meal !


One cup of cooked Orecchiette pasta ( or any pasta of your choice )
1 sachet of sundried tomatoes in olive oil
2 avocados thinly sliced
A handful of raw cashews
Mixed lettuce of your choice
A packet of rocket
1 small red onion thinly sliced
½ cup olive oil
½ cup of apple cider vinegar
2 tablespoons of grainy mustard
4 tablespoons of honey
A few grinds each of salt and pepper.
Whisk all ingredients together.

    Start Cooking

  1. Place salad ingredients on a lovely serving platter and drizzle with dressing just before serving.
