Healthy Chicken Salad

My family absolutely adores salads! And I find by adding a protein, such as chicken, you really do have a meal in a bowl.
Ingredients
1 roast chicken shredded
1 to 2 packages of Romaine lettuce shredded
1 cup of shredded purple and green cabbage
3 mielies boiled then chargrilled on your griddle pan and sliced off the cob. (If you don’t want to chargrill just boil them)
1 cup of olives with the pip removed and cut in half
1 cucumber, two tomatoes and ½ a red onion diced and mixed together
2 avos thinly sliced
1 cup of mayonnaise
½ cup tomato sauce
Juice of half a lemon
A few grinds of salt and pepper
Start Cooking
- Mix together
- Place your lettuce and cabbage at the bottom of the serving platter.
- Arrange the rest of the ingredients in separate sections on top of the lettuce and cabbage.
- Drizzle over the dressing.
