The Nine Days: 5 Nights of Meat-Free Dinners – Israeli Style Cauliflower Shawarma

This guide offers you five nights of creative, satisfying, and nutritious vegetarian meals that are easy to prepare and packed with flavor.
INGREDIENTS
1 head cauliflower, cut into medium florets
2 tbsp olive oil
3 garlic cloves, crushed
1 Tbsp chicken spice
1 tsp cumin
1 tsp smoked paprika (or regular)
1 tsp turmeric
1 tbsp honey
1 tsp salt (or to your taste)
½ tsp black pepper
START COOKING
- Preheat oven to 200ºC.
- Prepare a baking sheet lined with baking paper and set aside. Cut and wash the cauliflower very well. Pat dry from any remaining water.
- Place all the spices in a bowl along with the oil and garlic. Mix well. Add the cauliflower florets and toss until everything is nicely coated.
- Transfer to a lined baking sheet and bake for about 25-30 minutes. Or until golden brown.
- Spread some hummus on the centre of your bread, place 3-5 florets. Add chopped tomatoes, onion, and fresh parsley or coriander. Top with a nice amount of homemade tahini and enjoy it immediately.
